Somen Noodle Salad with Smoked Salmon

Somen Noodle
Smoked Salmon
Mange Tout
Carrot
Spring Onion
Coriander
Shiitake Mushroom
Baby Corn
Somen Noodle 60~80g

Dressing
Fish Sauce  1 Tbsp
Soy Sauce  1/4 tsp
Sesame Oil  1/4 tsp
Vinegar  1 tsp or more

1 Place the Somen noodles in a pan of boiling water and cook for few minutes.

2 Drain the water and rinse with cold water. Leave to drain well and cut noodles with scissors.

3 Steam Mange Tout, Shiitake Mushroom and Baby Corn.

4 Cool down the vegetables with cold water. Cut vegetables.

5 Thinly slice the Carrots and spring onions. Roughly chop the coriander.

6 Add together the Somen noodles, smoked salmon, steamed vegetables, carrots, spring onions and coriander.

7 Add dressing and mix well.
