Soba with Duck
Soba Noodle 100g
Soy Sauce 1 Tbsp or more
Mirin 1 Tbsp
Sugar 1 tsp
1 Boil dashi in a pan. (Instructions for dashi soup stock)
2 When the water boils, turn the heat down add some soy sauce, sugar, mirin and sake. Simmer for a while.
3 Salt and pepper the Duck. Cook it skin side down in frying pan. When the skin becomes crunchy, turn it over.
4 Put Soba in a pan of boiling water and cook for few minutes.
5 Put spring onions in the frying pan.
6 Drain the water and place Soba into a bowl.
7 Slice Duck and place Duck and Spring Onion on top of Soba. Finally pour on the soup.
