Cold Soba with Duck

Soba noodle
Duck
Spring Onion
Nori Sheet
Soba Noodle  100g
Soup
Dashi  150ml
Soy Sauce  2 Tbsp
Mirin  1 Tbsp
Sugar 1 tsp
Sake  1 tsp

1 Boil dashi in a pan. (Go to Basic for dashi soup stock)

2 When the water boils, turn the heat down and add some soy sauce, sugar, mirin and sake. (You need stronger flavoured soup than the soup for hot Soba Noodle. It’s more like sauce. But don’t make it too salty) Simmer for few more minutes and leave it to cool down.

3 Boil the water and put Soba in a pan. Cook it for few minutes.

4 Drain the water and rinse noodles with cold water. Leave aside in a colander.

5 Salt and pepper the Duck. Cook it skin side down on a frying pan. When the skin becomes crunchy, turn it over.

6 Slice the duck. Put them on top of cold Soba noodle in a bowl and pour on the soup. Finally sprinkle the top with chopped spring onion and nori.
